About Mildred
The chef behind the table
Born and raised in Guerrero, Mexico, Mildred — “Mily” to most — learned to cook in the orbit of her mother, Doña Karina, whose recipes and warmth still guide her today. Her love of food is rooted in tradition: authentic flavours, family rituals, and the belief that a good meal is a way of caring for people.
With more than twenty years in the kitchen, she has mastered the old techniques of prehispanic Mexican cooking — corn tamales, masa and dishes built on mango, chillies and native vegetables — and layered them with the global influences she has picked up along the way. After moving to the United States in 2005, she kept learning from other cuisines while holding tightly to her Mexican roots.
Today, from her base in Long Beach, Mildred cooks everything from prehispanic Mexican feasts to Italian, Japanese and Mediterranean menus. Every plate carries a bit of her story — and a lot of the love she was taught to cook with. As her guests put it, she doesn’t just cook; she nourishes.
